Sometimes I want a sweeter salad and that was what I was in the mood for today as part of my lunch. This is my favorite sweet salad at the moment. When citrus is in season we eat lots of it. I am currently obsessed with clementines. They seem to go so well with date and walnuts. Here is the salad.
Spinach Salad with Citrus, Walnut and Date
Serves 1Ingredients:
4 cups spinach
1 clementine, peeled and cut into bite size pieces
6 walnut halves
1 medjool date, pitted and cut into small pieces
Splash of date vinegar (can substitute apple cider vinegar)
Salt and pepper, to taste if desired
Directions:
Top spinach with clementine pieces, walnuts, and date pieces. Add a splash of vinegar and a little salt and pepper and enjoy.

If you want a salad that is sweet and savory this is my current favorite salad with fruit. Clementine and date provide the sweetness. Date vinegar cuts the sweetness of the fruit. Walnuts provide the fat necessary to absorb the fat soluble vitamins.
Each serving of this salad contains approximately 11,300IU of vitamin A, 70mg of vitamin C, 170mg of calcium, 265mcg of folate, 580mcg of vitamin K, 130mg of phosphorus, and 135mg of magnesium.
Unrelated note:

Yum. I've been making a similar salad lately with mandarin oranges, spinach, toasted walnuts, and sprinkle of feta. The dates are fantastic addition!

Spinach, mandarin orange sections, dried cranberries, walnuts, and an asian dressing on it with wonton strips!!!! It is so flippin good, I usually eat it all summer long!!!
Here is my dressing:
1/3 cup rice vinegar
2 tablespoons Asian (toasted) sesame oil
1-1 1/2 tablespoons agave or cane sugar
1 tablespoon soy sauce
1/4 teaspoon grated ginger, or 1/2 tsp. dry ginger
1/2 teaspoon dry mustard
I make my own wontons, and then bake strips in the oven....
Super simple
The dressing might not be totally accurate, I eyeball everthing and I am guessing.... :)

We eat a similar salad often, never thought to add dates, what a great idea! We don't usually add a dressing to this one, the clementines are so juicy it really isn't needed for us. We are on the same wavelength this week, I just posted a salad with clementines too:)

ReplyDeleteI would agree that this doesn't need dressing until you add the dates. They are so sweet that needs to be cut a little, IMO. But I am not a huge fan of sweet so that may be why.

I am the opposite of you when it comes to sweet, I think it's why I love fruits so much:) I never crave cookies or cakes, or any of that junk, but I love the sweetness of fruits. and I think I am addicted to clementines!!

ReplyDeleteThat is funny. I like sweet, but only to a point and then I need some sort of acid to cut through the sweetness. My hubby is the opposite. He loves anything sweet. When I eliminated sugar and reduced agave to almost nothing I am surprised he didn't rebel completely. Thankfully he is behaving himself (at least from what I know). ;)
