Pistachios and Heart Health
Research conducted at The Pennsylvania State University indicates that a serving of pistachios reduces LDL cholesterol. I am sure we have all read about the heart health benefits of consuming nuts in general so this isn’t too surprisingly. However, according to the abstract, the study “adds to a growing body of science supporting the health benefits, and the heart benefits in particular, of increased consumption of nuts, such as almonds, macadamia, and walnuts. However, pistachios have one of the highest antioxidant capacities of all nuts and contain more b-carotene, g-tocopherol and lutein - an antioxidant also found in dark green leafy vegetables. “
Pistachios aren’t something that we eat often. However, I did not realize that they had one of the highest level of antioxidants of all nuts. Now that I do you can expect to see more recipes including pistachios. I may have to make a pistachio nut cheese very soon.

I typically love all nuts. However, pistachios are the one nut that I am the least fond of.

ReplyDeleteThey aren't my favortie either. But I think it is mostly because they take a while to break into. I am going to try to make a nut cheese with them, and maybe another nut, to see what that does to the taste and texture. I will let you know. ;-)

Hmmmm intriguing...I think I've only ever eaten salted pistachios and pistachio ice cream and macaroons (before vegan, health-conscious days)!! Maybe I should get myself a bag for good nibbling :)

ReplyDeleteI typically only find unsalted in the shell unless they are bulk. If you find some that are shelled and unsalted please let me know the brand.

Chris and I eat about a handful of pistachio's a day. They are delicious and so so good for you!!

ReplyDeleteI used to keep a jar of pistachios on my credenza at work. When I did that I would have them 5 days a week. But I don't think of them at home. However, I am going to work on that now.

This is great news, but I only eat the salted ones. The unsalted hardly taste like anything. Pistachios are great to eat when watching a guilty pleasure tv show like 'Real Housewives of NY'.

I agree that unsalted pistachios are a bit bland. That is why I thought they might make a good nut cheese. I hope to get around to that soon.
