Food Safety and Other Thoughts

Food Safety:

Last month I received an email from someone who was switching to a plant-based diet and was worried about microbes on vegetables and how to keep their family safe. This email came in during our time at Hopkins and I forgot about it until today (sorry about that).  The first thing that struck me about this email was that the person appeared unconcerned about cross contamination from meat yet they were worried about contaminated veggies.  In the interest of complete disclosure for everyone I thought a post about food safety in regard to pathogens on all food products was in order.

Foodborne Illness:

In 2011 the Centers of Disease Control and Prevention (CDC) estimated that 128,000 people in the US would be hospitalized due to foodborne illness and of those over 3,000 would die.   This is in spite of the fact that the US food supply is one the safest in the world.  Rather a disturbing thought isn’t it?

There are many different organisms (bacteria, viruses and parasites) which are capable of causing food borne illness.  Most foodborne illness is caused by microorganisms which are present in the intestinal tracts of healthy animals.  Meat can be contaminated during slaughter by coming into contact with intestinal contents.  Fresh produce (veggies and fruit) runs into trouble when water that is contaminated with animal or human manure is used to irrigate fields.  However one big risk happens in the home kitchen is cross contamination. This occurs when raw meat comes into contact with surfaces (reusable grocery bags, cutting boards, countertops, cutlery, refrigerator etc.) which were not sterilized before they are used for produce.

When you read the most recent publication from the CDC it is clear that salmonella is at the top of their list to reduce since it is the greatest cause of hospitalizations and deaths. They are hoping to make as significant a reduction in salmonella as has been seen with E. coli.  When you look at where salmonella contamination comes from it is almost exclusively meat and eggs.

Symptoms of salmonella exposure include:  fever, diarrhea, and abdominal cramps.  People with underlying health conditions and weakened immune systems (old and young) can die from exposure if it enters the bloodstream.  However there are things that all of us can do to reduce the risk.

Actionable Steps to Reduce Your Risk:

According to the CDC here is what we can do to reduce our risk of getting sick from salmonella:

·         Clean. Wash hands, cutting boards, utensils, and countertops.

·         Separate. Keep raw meat, poultry, and seafood separate from ready-to-eat foods.

·         Cook. Use a food thermometer to ensure that foods are cooked to a safe internal temperature: 145°F for whole meats (allowing the meat to rest for 3 minutes before carving or consuming), 160°F for ground meats, and 165°F for all poultry.

·         Chill. Keep your refrigerator below 40°F and refrigerate food that will spoil.

·         Report suspected illness from food to your local health department.

·         Don't prepare food for others if you have diarrhea or vomiting.

·         Be especially careful preparing food for children, pregnant women, those in poor health, and older adults.

·         Visit FoodSafety.gov for the latest information on preventing food poisoning.

As you probably noticed reading this list they focus almost exclusively on meat, and for good reason that is where most of the risk is located. However anyone who brings meat into their house needs to be extremely mindful of cross contamination.  The FDA warns that contamination can even occur after the produce has been purchased, during food preparation, or through inadequate storage.

FDA says to choose produce that isn’t bruised or damaged, and make sure that pre-cut items—such as bags of lettuce or watermelon slices—are either refrigerated or on ice both in the store and at home. In addition they suggest these recommendations:
  • Wash your hands for 20 seconds with warm water and soap before and after preparing fresh produce.
  • Cut away any damaged or bruised areas before preparing or eating.
  • Gently rub produce while holding under plain running water. There’s no need to use soap or a produce wash.
  • Wash produce BEFORE you peel it, so dirt and bacteria aren’t transferred from the knife onto the fruit or vegetable.
  • Use a clean vegetable brush to scrub firm produce, such as melons and cucumbers.
  • Dry produce with a clean cloth or paper towel to further reduce bacteria that may be present.
  • Throw away the outermost leaves of a head of lettuce or cabbage.
  • Consumers should store perishable produce in the refrigerator at 40 degrees or below.

Additionally in my kitchen I also take the following steps:

·         Rewash all produce, including triple washed greens, at least once and sometimes twice.

·         Scrub all sturdy produce with a vegetable brush with a little castile soap that I am careful to thoroughly rinse off. In this category I include things like melons, winter squash, avocados, citrus, bananas, etc.

·         Softer skinned produce is sprayed with veggie wash or white vinegar and allowed to sit for a few minutes before rinsing thoroughly.  This includes things like grapes, bell peppers, and cucumbers.

·         Never wash produce before storing it since that dampness encourages bacteria growth.

·         Whenever possible I buy organic produce from farmers who I know.  For those of you who are local I know that Calvert Farms is very particular about the source of the water they use to irrigate their fields because of food safety concerns.

You all know that we don’t buy meat so that isn’t in our refrigerator. However if it were I would only store it on the bottom shelf of the refrigerator, and in ziptop bags, to avoid meat juices dripping on produce.  Additionally I wouldn’t rinse meat in the sink (I read others recommending to wash chicken) because when you do this you are spraying contaminated water onto other surfaces.

Conclusion:

Today I just spoke of salmonella because that is causing more problems. However the same precautions apply to other sources of foodborne contamination. The bottom line is that good food handling procedures are critical to keeping your family safe.  If you are unclear about what you should be doing please ask and I will continue to write about this until it makes sense. Practicing safe food handling procedures is one of the most important things you can do to keep your family healthy.

Personally I would be much more concerned about food safety if I were bringing meat and eggs into the house.  The risk of contamination from produce is much smaller than for meat.  However I still take steps to make certain that our produce is as clean as possible.  Practicing good food handling procedures is very important if you have anyone in your family with a compromised immune system (the elderly, children, and people with chronic diseases).

I am not a fan of using bleach because it is a carcinogen. However if you are bringing meat into your house you might want to consider a weak bleach solution (1 teaspoon of bleach to 1 quart of water) to sterilize your kitchen.   For those of you who eat chicken, you are already ingesting chlorine and might want to read this.  I can’t look at chicken without thinking of chlorine now.  :-P

Quick Update:

I am sure that you noticed that I haven’t put a post up this week.  After the month of  monster posts I really needed some time off to attempt to get caught up on my backlog of activities which are too numerous to list.   It is amazing how many things need to be done around here.  On the bright side I am making progress just not as quickly as I would like but that is usually the case.

I had really hoped to share the second website with you yesterday but there was no way that was going to happen no matter how hard I pushed.  Darn it!  You have no idea how much I dislike missing a deadline.  However I am going to keep working on the other site each day. It is starting to shape up and I hope to have it ready to share soon.

One of the biggest things that derailed my progress was that I started reading a marketing book earlier this week that caused me to rethink everything that had finalized including my target market.  As you can imagine when you change your target market that ripples through everything else that you do.  While I feel very good about the change I made in my target market (since it is now much more in line with who I am) I also have a lot of work to do now which was previously finished.  Having to do things twice is my own fault.  I knew all along what my target market should be but I didn’t think it was broad enough. However reading this book convinced me that I needed to go with my gut and that means I am now redoing everything. The second time is the charm right?  J

While I am on this topic I want to ask for your help.  When I get the other site up I would love to hear your thoughts on it.  I would like to make the second site something that everyone can benefit from and will use many of the things that I learned while blogging.   If you have any specific suggestions now feel free to share. Otherwise I will ask for feedback once the site is ready to share.  Wish me luck that I get it finished soon.  Dan is going to make certain that I don’t obsess too much and will let me know when it is ready for “public comment.”  ;-)

Since a few of you have asked if I am going to keep up with this site too the answer is that it my plan. At the moment I am planning to use this site as my personal journal of sorts (food, recipes, and life activities) and the other site will be focused on health and nutrition but there will also be recipes there too.  However I am also sure that things will morph and change over time in ways that I haven’t thought of yet.  If there is one thing I have learned in life it is that nothing ever goes as planned and you need to go with the flow.

Thank You for Your Thoughts and Ideas:

You guys had wonderful input regarding my last question about what holds you back from making dietary changes and/or what was the impetuous for you to change.  I particularly enjoyed the emails that talked about comfort foods and emotions and that will result in a post at some point since you guys had so many ideas about emotional eating to share.

If you have any other ideas about this in the future please drop me an email. I would love to hear any additional suggestions that you wish to share.  I appreciate everything that I have learned for all of you more than you know.  As I always say we are stronger together than we are alone.  J

Emotionally Rough Week:

When you have been touched by cancer anytime someone else is struggling with the disease it impacts you too.  Earlier this week we found out that the sister of a good friend (who has cancer) has been going in and out of a coma and that her end is now near.  Her original diagnosis was close to Dan’s and yet that is where the similarity seems to end.  Her sister (our friend) tried to get her to make some of the changes that we made but she was stubborn and wouldn’t do it. I still remember one comment she made years ago that “she didn’t have time to do all that, she had a job.”   A few months ago (November 2011) she was much more open to making changes but of course by that point it was far too late.

If there is one thing that I could say to all of you it is that life is precious and that you have much more control that you realize.  We should all take time every day to appreciate what we have to be thankful for, particularly our family and friends.  At the end of life you aren’t going to care about anything other than your relationships.  Please don’t make something else more important than it is.

Specifically what I am thinking of are my friends who say that “they can’t possibly eat the way we do.” Seriously guys it is just food and nothing, and I do mean nothing tastes as good as being healthy feels.  I know you don’t want to give up your favorite foods, neither did we. However if changing your diet, adding daily exercise, maintaining a health weight, and reducing your stress means an improved quality of life isn’t that more important than what is on your plate?  You can do what we did and still be around to spend time with your loved ones or you can give up some of those quality years.  The choice is completely up to you.  How you treat your body does impact the doubling rate of cancer. No one actually knows how much impact food has but Dan’s health has remained strong and our friend’s sister is going in and out of a coma.  Of course you can’t compare two different types of cancer directly and point to lifestyle as the entire reason for the difference.  However no one would disagree that when you put healthy food (whole plant-based foods) into your body you are making it stronger. While I believe that health is complicated I also know that how we treat our bodies makes a difference.  I often think of the old computer phrase “garbage in garbage out.”  When you feed your body healthy foods you are giving it the best chance it has of fighting disease. Please think about that the next time you are making yourself something to eat.  What you put in your mouth matters!

Being at Hopkins yesterday brought the usual roll coaster of emotions that I feel whenever I am there. While we had a great visit I saw plenty of people around us who were not as fortunate.  After the appointment Dan went back to work and I hung around the hospital to pick up his prescription.  The wait was over two hours and I grabbed a comfy chair and proceeded to read the marketing book that I bought this week. However I couldn’t help but notice many people in wheelchairs, on oxygen, without hair and it made me a little sad.  You learn to appreciate all the things that are going right for you when you see so many people struggling.  I am so passionate about our lifestyle changes that my gut reaction was to go over to them and start talking about nutrition but I also know that most people aren’t ready to do what we did; they are more like our friend’s sister.  *sigh*  In my perfect world one day all people will understand the connection between nutrition and health.

While I was waiting for the refills I saw one particularly disturbing scene.  A man with three children one in a wheelchair stopped at the outpatient pharmacy (for a prescription I assume) and this man left with an extremely bad attitude. He was using plenty of loud vulgarity (lots of F-bombs) in front of everyone including his children. I assume this was because he didn’t want to wait for the meds.  Now I can understand two hours feeling like a long time but increasing your stress and teaching your children bad behavior isn’t going to help the situation.  Clearly this guy doesn’t practice meditation but I think he needs to.  Stress isn’t good for anyone’s health and I felt very sorry for his child in the wheelchair who had to experience this negativity.  This was a good reminder that it does no good to sweat the small stuff. As I watched this scene unfold I wondered to myself if the man had any realization of the stress he was having on his sick child.  People can be dense.

I hope that something that I wrote causes you to stop and think about your loved ones, the quality of your life, and whether your habits are good or bad for your health.  Remember you really can make a difference in your health it just takes the willingness to change your habits one at a time.

Random Food:

I was very busy this week so I didn’t take time to photograph all of our food.  We ate of lot of old favorites like crudités and hummus (you know I love that right?).

We had many different salads.  I made a dressing this week based on something that I saw Dr. Fuhrman do that turned out pretty well. In the Vitamix I included:  raw cashews, raw sesame seeds, peeled and seeded orange, fresh ginger and white balsamic vinegar.

There was also soup. This one was in a “cheezy base” that was a thinner version of the cashew queso and included white beans, mushrooms, onions, garlic, and thinly shaved Brussels sprouts that I added right before serving. Dan enjoyed this so you will probably see a recipe for it at some point.

I also made one of my favorites, artichokes and mushrooms in a southern Italian seasoned red sauce over quinoa.

There were also many green smoothies with kale and cocoa.

Like I said at the beginning we had a lot of old favorites nothing really out of the ordinary.

Happy Thoughts:

It has been a very good week, and I have many things to be thankful for today which include:

·         I just noticed that the cherry blossoms are starting to bloom even though it is early February. Sorry for the picture quality I took this with my cell this morning and couldn’t get it to focus on the flowers. We have had a very mild winter as you can see.  Also I am very happy that we went to DC forthe Cherry Blossom festival last spring since I have no idea how it will be this year with our crazy winter, warm, cold, warm and cold weather changes.

·         Speaking of crazy weather. Last week it was 71 on Wednesday and snowing on Saturday.  I snapped a picture to show you because I found it so odd.

·         Also on the bright side the predicted rain and snow mix we were supposed to get earlier this week didn’t amount to much which was very nice. While I love the beauty of a pristine white snow covered landscape I am ready for spring now.

·         I love the marketing the book that I started reading earlier this week. Even though I have taken marketing class in both undergrad and grad school this book (not written by a marketing professor) definitely caused me to ask myself some hard questions.  I love books that make you think.

·         We had a very good medical appointment on Friday which was a follow up to the unplanned January trip to Hopkins.  Who wouldn’t a beaming doctor who is saying “you are doing great, don’t change a thing.”  Love that!

Signing Out:

Saturday we are expecting more frozen precipitation this time in the evening.  We are having the strangest winter this year. It just makes no sense how we go from 71 degrees to snow in a matter of days.  Hopefully winter is almost behind us now. Personally am looking forward to the start of sailing season.

Do you have any fun planned for this weekend? We are getting together for dinner with our new friend Lauren.  I am looking forward to introducing Aimee to Lauren since I think they will enjoy each other they and will be seeing each other this sailing season.   Is there anything better than spending time with people who you enjoy being around?  Don’t you just love spending time with friends?  J

Whatever you are doing I hope you have a wonderful weekend. I will talk with you again soon.  Ciao.

31 Days to Better Health - Day 28

Don’t you just love weekends?  I hope everyone is having a wonderful Saturday.  I am very happy to tell you that I managed to write a lot of this post on Friday which meant more time with my sweetie over the weekend.  *woo hoo* Today we are getting together with our friend Louis and tomorrow we are seeing Lauren (the nearly vegan nurse we meant at Hopkins).  I am not sure what else we will be doing this weekend but we will definitely being having fun.  J

I couldn’t help but notice that you guys have gotten quiet on me again.  Does this mean that you haven’t enjoyed the last few posts?  If you have any feedback please share it with me.  My goal is to write things that are helpful to you but I don’t know what that is if you don’t tell me.  Please remember that I haven’t gotten my certification in mind reading yet.  ;-)

I have received a few emails asking me if I learned what I have been writing about this month at the Institute of Integrative Nutrition and the answer is no. The things that I have been writing about this month are a combination of things I learned:  managing people, taking management and organization behavior classes in college and graduate school, and trying to figure out what would work for me.  The ideas that I have written about this month are some of my favorites but there are many more where these came from.

Two-Bite Test:

Yesterday’s post required a lot of homework so I wanted to write a short and sweet one entry today to give everyone a break.  This is something that I read about years ago and once I put it into practice I realized how valuable it is and I think you will agree once you try it.

The two-bite rule applies to indulgent food.  The premise is that when you want to eat something that is decadent (by your standards), eat the food slowly and consciously like we talked about during day 6. But now we are going to add another aspect to the process. Now I want you to be very discerning about the food.  Let me explain what I mean using cheesecake as an example.

You are out to dinner and see your favorite dessert, cheesecake, on the menu.  You know the pastry chef was trained in Paris and is known for her desserts. Cheesecake has always been your favorite and this one is a bruleed version with a calvados, apple and walnut topping so you order it.  The cake arrives and it is gorgeous and you can’t wait to dive in.  This is where it is critical to slow down and take your time before you take the first bite.  We are going to look at this example two ways to help demonstrate this rule.

Option 1:  You take your spoon to crack the brulee top and it doesn’t snap.  Bad sign number one.  Then you put the cheesecake in your mouth and the texture is much denser than what you like a cheesecake to be.  Bad sing number two.  Just in case you have overreacted you slowly and consciously try a second bite this time with the calvados, apple and walnut topping and the cake.  The apple topping is too sweet and the second bite doesn’t get any better than the first.  Three strikes … this dessert is out.  You stop eating the dessert knowing that what you eat you have to burn and this isn’t worth the effort that it will take you to burn off.

Option 2:  When you crack the brulee top on the cheesecake with the spoon and it snaps.  Nice!  The texture of the cheesecake is soft and it has a light lemon flavor in the base. Now you have a second bite this time with the apple topping and that makes it even better.  Delicious!  This indulgence has passed the two-bite test.  Now the only question you have to answer is whether it is worth burning off and only you decide that.  Given yesterday you may also want to ask yourself if the “healthy you” would be eating this?  Maybe healthy you would have this if it were a special occasion.  Only you know the answer to that question.

The other way to think of this is life is too short to waste it eating subpar food.  You can use this rule with any food it doesn’t just apply to dessert.  I follow this rule whenever I am eating anything that I consider indulgent.  If I am going to eat something that is outside my usual food then it has to be delicious.  I always remind myself that I am what I eat and that helps me to make better choices. Additionally I tell myself that restaurant food always contains more calories and fat than my food and that if I eat I have to burn it off.  These ideas make it much easier to only eat “the best” example of whatever it is I am having.

One reason that I wanted to talk about the two-bite test is something that saw online long ago that I have never forgotten. At a different blog someone had baked a dessert (a cake I think it was) and they continued to eat it every day (for a least a week) until it was gone.  All I could think of was that by day three that cake had to be dried out and not very good and yet they continued to photograph it and eat it another 4 days.  By the end the cake even looked dried out in the pictures.  I was so surprised that someone would waste calories on old dried out cake and knew that I needed to write about that some time. That dried out cake would never have passed the two-bite rule and would have gone into the trash at our house.  I hope this explains the two-bite test.

Today’s exercise:

1.       The next time you have something that you consider decadent employ the two-bite test and see what happens.  Write down your experience in your journal.  Try to answer the following questions:

·         Does the food taste different when you take your time and really try to experience it?

·         When you consciously think about the fact that you will need to burn off what you are about to eat does that cause you to naturally eat less?

·         Realizing that you deserve to enjoy the best, most delicious example of food you want (cheesecake, etc.) does that change how you view the food in front of you?

I think of this as life is too short not to eat “the best”.  If I am going to deviate from my eating plan then I expect that calorie investment (think food as a bank account) to be worth it to me.  I hope this makes sense.

Progress on my goals:

1.       Newsletters - Friday was hectic since I was busy writing the bulk of thee posts so there was no work on the newsletters that day.

2.       Body Bugg – I continue to wear my bugg and I have gotten back into using it the way I had intended when I purchased it.  Go me!  J

3.       Date with Dan – Dan and I have been going for a walk each night after dinner.  We are planning to go on a date this weekend.  *woo hoo*

4.        Measuring calorie dense food – I am making a little progress on this but I really need to focus on it with every veggie meal to help my body absorb the fat soluble vitamins.

5.       Working on my business –  My schedule got in the way of working on the business today. I am hoping that Dan and I will have some time to work on this together over the weekend. I value Dan’s opinions and would love to get his input.  If we don’t have time to do that this may have to wait until February.  *sigh*

How are you feeling about your progress so far?  I hope you feel like you have made a few lasting changes this month.  J

Random Thoughts:

Evening walks have definitely become a habit for us. We both enjoy getting out late when the neighborhood is quiet and peaceful.  It is wonderful to spend time outside each evening and spending time together.

I get a lot of questions by email about why a particular blog has been included on my blog roll.  Usually this would be because it is either not vegan or not healthy.  Many of the blogs on my blog rolls were added years ago and I haven’t looked at them in years. I am going through the list now and eliminating many that I no longer read. Expect my blog rolls to continue to change as I get time to review the list and add and delete items.  Also if you know of any blogs that I should add please let me know.  My goal is to develop a list of blogs that represent either:  healthy recipes, healthy veganism, health and nutrition in general, humor or artistic chefs who look at food in an unusual way.

Acknowledgements:

Have you made any progress writing acknowledgements?  I hope you are working on this exercise and enjoying it. I find that it helps me stay positive and recognize the things that I do every day.  Here are my acknowledgements:

·         I am very proud of myself for getting so much writing done on Friday to free up my weekend. It is nice when you know what you want to do and can make it happen. J  Since I had a little extra free time I was able to enjoy a leisurely morning and lunch with friends.

·         Thursday I decided to work on a very different recipe, the quinoa and blueberry breakfast bars.  It is definitely good to break out of my comfort zone in terms of cooking.  I think this recipe has promise and I am looking forward to perfecting it so that all of us have a healthy portable breakfast option.

Friday:

My food on Friday was again fast things that I could grab and go. I knew that I didn’t have much time since I was busy trying to write the bulk of three posts so that I could enjoy my weekend.  Here is my food from Friday.

Breakfast for me was two of the quinoa, oat, blueberry and nuts bars that I am working on. The flavor of these is good but I need to work on the texture.  I hope to have this recipe finalized next month.

I also had a grapefruit for a mid-morning snack.

Lunch was leftover kale and veggie stir-fry over black rice.  What would I do without my intentional leftovers?  ;-)

Dinner was very late and definitely made on the fly.  My brain was fried after spending the day writing and trying to be creative.  I literally had no idea what I was going to cook at 9pm.  Dan suggested smoothies but I wasn’t really in the mood for that.  However a hot soup from the Vitamix sounded appealing.  In the Vitamix I combined raw cashews, frozen spinach, frozen artichokes, onion, garlic, nutritional yeast and no-salt seasoning.

Happy thoughts:

Have you gotten into the habit of writing your happy thoughts?  I find it helpful to remind myself how often things go well and that I shouldn’t take these things for granted.   As always there are so many things to be thankful for that I almost don’t know where to start. Here are my happy thoughts:

·         I am thrilled to have gotten so much writing accomplished on Friday.  Knowing that I would have more time with my husband and friends this weekend was a wonderful feeling.

·         We both love spending time with friends and we had a nice time with our buddy Louis on Saturday.  Our sweet Aimee was also working on Saturday so we were able to spend some her too.  I couldn’t think of much nicer way to spend the afternoon than with friends.

·         It was great to see everyone at the restaurant since this was the first time that saw them since going to hospital. They were all concerned and it was very sweet.  I am really not kidding when I say the restaurant is like “Cheers” for us.  I ducked into the kitchen before we left to catch up with Ian and he was prepping a vegan Thai vegetable dish for tonight. We may have to go back for dinner.  ;-)

·         Tomorrow we are planning to get together with Lauren, the nearly vegan nurse that we met at Hopkins earlier this month. She is the one who also lives nearby for those of you who don’t remember the story.  It will be nice to see her outside the hospital.  I already warned Ian that I am introducing a new vegan to mix; he took it better than I expected.

·         Ian has added a healthy soup to the menu which we had for the first time today. It was vegan and had kale, white beans, sweet potatoes and I am fairly sure there was yellow miso in the broth. I will make it a point to ask him the details when we go in again so I can make my own version of it for all of you soon.  Dan, Louis and I all got the soup and it was very good.

Signing Out:

I spent most of Sunday writing for the blog and the business.  By the end of the day on Friday I was mentally exhausted. However I was also very happy to have a jump on my work for the weekend.  However it was all worth in on Saturday when I was able to take the morning and afternoon off.  We had a very nice lunch with our friend Louis and had time to fill in Aimee, Ian and the gang about our recent adventures.  I have no idea what we are going to do with our evening but I am looking forward to spending time without my computer.

Whatever you are doing this weekend I hope that you are enjoying yourself.  Tomorrow we will be working on vision boards in case you were wondering what the next post is about.  After that we only have two more health posts to go and we will return to our regularly scheduled programming.  ;-)  Talk with you all again tomorrow.

31 Days to Better Health - Day 27

Happy Friday everyone!   The weekend is here! *woo hoo*   I am very much looking forward to 48 hours with my hubby.  My plan is to try to write as much of the posts for today, Saturday and Sunday’s as I can before Dan comes home from work tonight.  Since these January posts have been taking me most of the day to write I am not sure how much I can get done today but I am going to try to write most of the next three.  Wish me luck, since I know that I am going to need it.

What did you think of yesterday’s post?  Until I started talking to people and their food choices and diets I didn’t realize how common it was for people to stick rigidly to particular diets. While it was nice to not be alone, it was also sad since I had broken out of the trap but many others had not.  I hope something that I wrote helped you to look at food choices differently.  For those of you who are just joining us here is the recap of what we have accomplished so far to remind us all of how much we have covered during the first 26 days of January:

Day 1 – Defined Success and What is/was Holding Us Back
Day 2 – Determined our Purpose and Looked at Passion

Day 4 – Listed the Things We Have Needed to Work on for a While
Day 5 – Looked at Optimism vs. Pessimism and Fear vs. Intuition
Day 6 – Practiced Conscious Eating
Day 7 – Hara Hachi Bu
Day 8 – Taking the Stress Out of Meal Time
Day 9 – Acknowledgments
Day 10 – No Excuses, Do it Anyway
Day 11 – Is it True?
Day 12 – Have You Really Connected With Someone Today?
Day 13 – Motivation is a Decision

Decide to live as if:

This is one of my favorite topics as well as being one of the most powerful exercises in terms of making changes.  Once you understand what I mean by “deciding to live as if” I think you will agree with me. I hope that you are willing to give it a try to see what happens for you.

People often say that they will do something once they get motivated.  I wrote about this earlier in January, specifically on day 13 with my “motivation is a decision” post. However as we remember from that prior post you have to decide what you want and then put things into action which is why motivation is a decision.  Today’s post is also about decision, specifically about deciding to live as if your life is already exactly as you want it to be.  This means that we need to know precisely what we want first, and then the rest follows naturally. Since we will be putting together a vision board this weekend I thought this post was a great lead in to that.

A few days ago (day 25) we began thinking about what we wanted our lives to look like. We are going to take that idea even further today.  Go back to what you wrote in your journal about what you wanted your life to look like. For those who didn’t do those exercises I am going to reiterate them here:

Visualize your life as you want it to be.  The important thing is that you picture all the details of your new life.  Below are a series of question to help you see the details:

·         What do you look like in your perfect life? Are you slimmer or more fit? Do you dress the same? Do you carry yourself differently with this new confidence?

·         How do you feel in your new life?  What is your attitude toward challenges now?

·         What type of things do you do now?  Have your leisure time activities changed?  Are you home less often?  Maybe you are going to the Caribbean for a winter vacation since you are comfortable showing ore skin.  Really think about how life would change if you were truly happy with who you were.

·         Do you have the same job or career?  Maybe you don’t like your current job but don’t feel confident to change it.  What would you be doing if you loved yourself?

·         What do your relationships look like now?  With this new confidence is your love life better?

This is the fun part; we get to write our personal slogan.  This can be anything positive the sky is the limit.  Here are some examples of empowering personal slogans:

·         I can do anything that I set my mind to.

·         I will make good choices for my health every day.

·         Life is a learning experience and I plan to absorb everything that comes my way.

·         Every day brings a new opportunity to grow and change.

Now that you have a mental picture of your life I want you to take it even farther.  This is where we are going to live as if we are already that person which we pictured.  If you were living that life now what would change about your day-to-day life?  If you have never lived that life before then I want you to picture a healthy friend and imagine what they would do.  Really think about the details of your life and get specific.  Here are some questions to help you out:

·         How does healthy you start the morning?  Are you getting up and doing yoga, Pilates or going to the gym? Maybe you have a morning date with a friend in the neighborhood to cover a few miles and then get a plain tea at the local coffee shop.  Possibly you have a friend that you meet the gym for a morning exercise class or swim.  Imagine all the possibilities and write them down.

·         What does this new healthier you have from breakfast?  I am sure this person isn’t skipping breakfast or having a Danish, but what are they eating?

·         Now it is lunch time for healthier you, what are you having? Do you routinely pack your lunch so that you have control over the quality of your food and the ingredients or do you know all the healthy options near your office?

·         Are you getting outside with part of your lunch break to get in extra steps into your day?

·         Speaking of steps are you taking the stairs instead of the elevator?  Healthier you would do that right?

·         Do you pick up the phone to talk to a colleague or do you walk to their office to discuss the topic at hand?  Maybe you suggest a walking meeting to discuss the latest project you are working on instead of being stuck in the office or in a conference room.
·         Are you working late or are you heading out of the office early enough to go to the gym, jog around the harbor, do some gardening, or some other healthy activity?  Healthy you wouldn't go home and sit on the couch watching TV every night do they?

·         What types of food will you be having for dinner?  Do you eat at a specific time or do you wait until you are hungry? Do you have your meals planned for the week or do you stop at the farmers’ market or grocery store on your way home to pick up what is local and in season that cook what looked good that day?  When you cook are you making intentional leftovers for lunch the next day?

·         After dinner what will you be doing?  Maybe you do a little yoga to wind down, or you could be meditating.  Are you reading a book, going for a walk, or catching up with a friend?

·         Are you getting 8 hours of sleep now that you are healthy?  Does this mean that you need to get into bed earlier than normal? This may be required if you are now going to the gym or exercising before work.

·         What are your weekends like now?  Do you make plans with friends to stay active? What specific activities do you take regularly engage in?

Did my questions give you an idea of what you need to think about?  The goal is to think about every facet of your life and how it will change when you are living the life that you want. I hope you understand the level of detail that you need in order to make this work. Please take time to answer the questions with as much detail as you can.  Really get into this exercise.  If it helps imagine that you are an actor playing a role and try to get into this new healthy person’s skin.  If you answer the questions with great specificity it will be much easier to put these things into practice tomorrow.   Okay I just heard the collective groans when I said “put these things into practice tomorrow.”  You didn’t think we were going to stop at thinking about it did you?  Thinking about this stuff won’t help you if you aren’t willing to do the work. Sorry, but life really doesn’t work that way though it would be if it did.

Today’s exercise which you will start today but will continue for at least a week and hopefully will become permanent:

1.       Write the answers to all the questions above in your journal. Add as much detail as you possibly can to make it easier for you to follow through with the actions.  It may take you a few days or a week to get all the details down on paper, but it will be time well spent.  The act of thinking about how you would live differently and then writing it down will help crystallize the actions in your mind.  It will also help you with the upcoming vision board exercise.

2.       Now start to “live as if” you life were always as you want it to be.  The only caution that I will give you is if you new life includes a lot of exercise and you are currently sedentary that you start slowly.  If you are over 40 years old, or have more than 30 pounds to lose go to the doctor for a physical to make certain that you are healthy enough to start exercising.  However even if you are over 40 or have more than 30 pounds to lose you can move more.  Start with easy activities like walking more.  You can start immediately making dietary changes.

3.       Before you do anything ask yourself what the “healthy you” would be doing?  The idea is that you need to put healthy habits into place before you will get healthy.  There is nothing magical about being healthy it is the state that naturally results as an effect of a many healthy decisions and resulting actions.  Did you notice that we are back to the law of cause and effect again?  When you do healthy things you will become healthy.  If you don’t like your health as it is now that is a sign that you need to make some changes and only you know how drastic those changes need to be based on your current physical condition.

I hope that this exercise caused you to get out of your comfort zone. The entire idea is that everyone’s health (current condition) is nothing more than the result of their recent decisions.  All of us have the power to change our condition but to do that we have to be willing to make different choices.  You can make small changes or you can make big changes. The results that you get will be in direct relation to the amount of change you make. This is why I keep pushing you to make big changes.  The benefit of big changes is that you see results faster and that encourages most people to stay the course.  Please know that getting healthy is very simple.  All you need to do is consistently make good choices and before you know it life will start to change.  I know you can do it!  J

Progress on my goals:

1.       Newsletters - Thursday was also hectic but I did get in 30 minutes working on the newsletters.  Not as much time as I wanted but better than nothing.  L
2.       Body Bugg – I continue to wear my bugg and I have gotten back into using it the way I had intended when I purchased it.  Go me!  J
3.       Date with Dan – Dan and I have been going for a walk each night after dinner.  Thursday we extended our walk and added a trip to the grocery store to the outing.
4.        Measuring calorie dense food – I am making a little progress on this but I really need to focus on it with every veggie meal to help my body absorb the fat soluble vitamins.
5.       Working on my business – I spent an hour attending a webinar Thursday evening.  It is always good to see what the competition is up to.

How are you feeling about your progress so far?  I hope you feel like you have made a few lasting changes this month.  J

Random Thoughts:

I just saw a commercial that caught my attention. The commercial was for Special K and they are trying to tell people that you can lose up to 6 pounds in 2 weeks.  Really? Let’s do the math on that shall we.  To lose one pound by diet alone you have to reduce your intake by 3,500 calories which means 6 pounds equals 21,000 calories.  If you are going to lose 6 pounds of fat in 14 days that would mean that you need to reduce your calorie intake by 1,500 calories per day.  Unless as a woman you are eating approximately double the amount of calories that you need the math on this just doesn’t work from diet alone.  Commercials like this annoy me because they are misleading.  *ugh*

Why is it that time passes so slowly when we are younger but seems to speed by the older that we get?  Does this happen to everyone or is it just me?

Did you take time to hug the people who you love today?  I try to remember than I never know when or if I will be seeing people again and that I want them to know how much they mean to me.  I always hug people when I leave and I make certain that they know how much I care.

If today were the last day of your life what would you do?  When you look at life this way most of the things on our to-do list would melt away.  In my mind the only thing that matters are the important people and relationships in our life.  With this in mind I try to give something to others every day.

Acknowledgements:

Have you made any progress writing acknowledgements?  I hope you are working on this exercise and enjoying it. I find that it helps me stay positive and recognize the things that I do every day.  Here are my acknowledgements:

·         We had a delicious dinner Thursday night that was also fast to prepare. It always makes me very happy that I can make healthy food that my husband loves and it is even better when I can do it quickly.
·         Even though today was busy I took the time to check on my parents and take in trash cans for one of my neighbors.  None of us should ever be too busy to do a little something for others.  Life is always better when we take time to be kind.
·         I somehow managed to write almost three posts today by staying focused on the task at hand.  It is amazing what you can do when you put your mind to something.

Thursday:

My food on Thursday was not terribly exciting.  I started my morning with a green smoothie.   There is nothing like raw kale in your breakfast to give you a jolt of energy.

I had grapefruit for a snack

Lunch was a bowl of mushroom barley soup which I poured over raw baby spinach.  I flavored this soup with lemon and smoked paprika to give it a Spanish flavor.

Dinner was a quick “stir fry” (no oil) of red onion, garlic, minced ginger, vegetarian oyster sauce (which is basically mushroom sauce), a splash of mirin (Japanese rice wine vinegar) and touch of stevia, straw mushrooms, baby corn and shredded kale. I served this over black rice and topped it with sesame seeds.

·         Our weather on Friday was magnificent. It was 63 degrees here by noon.  I am amazed by the winter we are having weather wise.  It is definitely starting to feel like spring here.  Last night at 10pm it was still 49 degrees.  Is it really January in Baltimore?  A girl could definitely get used to this weather.
·         Dan has been getting home from work a little earlier all week.  I think he has been home before 7:30 the entire week and that is a minor miracle at our house.
·         You may not remember but I told you weeks ago that Dan bought me a new laptop earlier this month because my other one was locking up when I had Dragon open.  Yesterday the headphone adaptor arrived so that I can start using Dragon again. I am very much looking forward to less typing in my future.

·         I received these great photos today from one of my friends at the marina.  I love the photo of the harbor in the morning fog at the top of the post.   This photo is our boat taken from our friend’s powerboat. Since we haven’t been to the marina in a while it was very nice to see our girl.
·         Today is one of those days when I am very happy that I overcame my frugal ways and bought the Vitamix.  When dinner time arrived I had no idea what to make but soon decided that a vegan crème soup was in order.  Less than 5 minutes later we had a hot bowl of Crème of Spinach and Artichoke Soup.  It is days like this when my Vitamix is priceless.

Signing Out:

Friday was an extremely productive day and that felt really good.  I didn’t get all three posts written but I did get a lot Saturday written and part of Sunday so that was excellent. I chatted with my buddy Louis for quite a while and we are going to try to coordinate getting together tomorrow which will be great.  Since Louis lives in Delaware we don’t see him as much as we would like to.

I am so happy that the weekend has started.  While I have no idea what we will be doing I am looking forward to time with my hubby and seeing my buddy Louis. I hope you have some fun planned for your weekend. Talk with you again tomorrow.  J
