I went to a vegan restaurant in Belgium and the mayo was AMAZING so I asked for the recipe. She gave it to me but it didn't work out... So after some experimentation I think I have worked it out. <br /><br />Blend together 100ml (1/2 cup) soy milk, salt, pepper, mustard, agave. <br /><br />While blending, slowwwlly stream in 500ml 2 1/2 cup) oil. She said it is important that the oil hasn't been left out as it oxidises and doesn't work. I just bought a new bottle of cheap oil.<br /><br />When the oil is added, slowly stream in 3tbsp apple cider vinegar. <br /><br />The chef made it very clear to put in the vinegar last! I think this is important with emulsifying it. I use a recipe from Robin Robertson's Fresh From the Vegan Slow Cooker, so I prepared two batches of that today, one in the slow cooker and the other in the pressure cooker. The pressure cooker one was BY FAR superior. It had such a good flavor that I could use it on its own, while the slow cooker one was much more anemic-tasting. I am really sold on the pressure cooker now! A question for you, if you don't mind: how long do you cook your stock for in the pressure cooker? I looked online and found ranges from 5 to 30 minutes. Thank you so much for letting me know. :-) I wish more people realized that it is just as easy to be an unhealthy vegan as it is an unhealthy omnivore. <br /><br />First, you can't eat too many servings of either vegetables or fruits. That being said the easiest way to think of a serving is that generally one piece of fruit is a serving (about 1/2 cup). A standard banana would be 2 servings. You get the idea. As far as veggies are concerned 1 cup of raw veggies or 1/2 cup of cooked vegetables is roughly a serving. For something like leafy greens you need to really pack them before measuring the cup. I usually just eye ball 2-3 cups of unpacked leafy greens and call that a serving. Something like dried fruit is a much smaller serving, think 1/4 cup or less. LOL, hopefully your mom listens to you. ;-)<br /><br />I don't cook much with kohlrabi but only because I never think of it. Kohlrabi is a wonderful vegetable, part of the cruciferous family so it is very healthy. Generally I either shave or grate it and then marinate it. It is also nice cut into sticks like you would jicama to use with dips. My favorite ways to use it is thinly shaved then either quickly pickled (with other veggies) or marinated in fresh lemon juice and Italian seasoning. It is good in slaw too. I hope that helped you. :-) Great question though since it isn't a common veggie.
