A Very Different Smoothie


This is the most interesting smoothie I made yesterday. The flavors worked very well together, and I would drink this just because it tastes good. It reminded us both of a mango lassie, which must have been due to the cardamom. Here is what I made:

Pineapple and Carrot Smoothie with Coconut Milk and Cardamom
Serves 2

Ingredients:

2 cups pineapple, cut into chunks
13.5 ounce can of light coconut milk (I used the Native Forest Organic Brand)
1 large carrot cut into chunks
½ teaspoon ground cardamom, or to taste
Approximately 8 ice cubes (or what is required to get the thickness you like)

Directions:

Place everything in your blender and process until it is smooth. Serve chilled.

Comments:

I made this because I was looking for something different for Dan’s sore throat. However the flavor is really good and I would now make this just for the flavor. This version is on the thin side, for obvious reasons. But you can make it thicker with more ice or by increasing the solids or reducing the liquid.

Each serving of this smoothie contains approximately 6,750IU of vitamin A. The other values were reasonably low. I may try to play around with this idea to up the nutrition. But if you are looking for something that tastes good this is a winner.

Unrelated note:

I have not been posting things like normal since they are all variations on the smoothie theme. Until this morning I have been eating the almost the same things I was feeding Dan. This morning Dan wanted me to make myself something that I wanted. So I had a quick deconstructed sushi salad for breakfast (thank goodness for leftover sushi rice and dressing) and Dan had a smoothie. I am going to post the red wine marinated mushrooms I made on Friday later today.

 Here is another picture of a busy little bee I took on Saturday. I hope you enjoy it.  This will be the end of azalea pictures as I looked at them this morning and they are now past their peak and look a little sad.

  1. That smoothie looked and sounded so good that I had to run the cafeteria at my work and buy an odwalla smoothie...it's not exactly the same, but along the same lines. Probably has more calories than yours does.

    I am so glad you liked it. I had a feeling you would since our taste in food is so similar. Cardamom is one of my favorite flavors. I just love the stuff.

    I don't normally buy smoothies out but I will keep my eye open for the Odwalla brand when we are on the road. Thanks for the tip. :-)

  3. Such a pretty color. This is very similar to a smoothie I make, I add a lot of kale to it, and the flavor is hidden by the pineapple, but it is not such a pretty color as this ;-)

  5. Ali, did you use fresh pineapple, frozen or canned in water? What does cardamom taste like?
    I would like to make this as aoon as possible! Oh! I almost I need to post on my juice blog!!!! I am two days late in posting! I am making a Ballroom Blitz Juice!

    I used fresh but there is an organic brand of canned pineapple in juice that would work too. I believe the can is close to 16 ounces.

    Cardamom is floral and reminds me of vanilla and cinnamon. It is a flavor that once you have had it you will always remember. I love it, and our chef friend Ian uses it a lot too. It is almost always in a mango lassie. If you have one of those and couldn't figure out what was in it, it was probably cardamom.

    Thanks for reminding me of your juice blog. I still need to check that out.

    Yay for the Vitamix delivery tomorrow. Any idea what you are making first? I had such a good time playing with mine when we first got it. I would say start with soup. It still amazes me that it makes hot pureed soup so quickly.
