Preview Post: Cannelloni

Zucchini Cannelloni stuffed with Almond Feta, Spinach and Walnut Pesto and Artichoke Hearts on a Bed of Sun-Dried Tomato Marinara:



Today was much more busy than normal because of my birthday. I will give you all the details tomorrow.

Dan and talked about whether to eat out but in the end we opted to come home for dinner. I made us a big salad for the first course. Our entrĂ©e was zucchini cannelloni stuffed with almond feta, spinach pesto, and artichokes and served them on a bed of sun-dried tomato marinara. This idea came from Dan’s dinner at 105 degrees. I wanted to make something similar but healthier. Don’t get me wrong this dish has plenty of fat, just a lot less than the restaurant version based on the recipe in the cookbook Dan brought home. I thought you all might want a preview of what I will be posting tomorrow. It was ridiculously easy and will be more of a method than I recipe.  I took pictures of the intermediate steps. I think you will enjoy it.

Thank you so much for all the birthday wishes. It was very sweet of all of you. For now I am going to spend some time with my hubby before he has to go back to work tomorrow.  Talk to you tomorrow.

    Glad you like the look of it. It is also very easy to make. Don't forget to stop by tomorrow for the pictures and instructions. Oh, and my hubby loved it and told me I could make it often so that was a good sign. ;-)

    I mentioned to Dan that you would be happy to see this post when I decided to make this for dinner. Dan thinks mine were better than what he had at the restaurant because they are less fatty. He has volunteered to take all the leftovers to work to save me. Isn't he sweet? LOL

    That husband of mine is always being so selfless, LOL. Seriously though it is higher in calories than I need so I prefer him to polish it off. ;-) However I must admit it was darn good.

    This isn't my healthiest dish, but it was very tasty. It made a nice celebration dinner. Dan happily took the last two cannelloni in his lunch today. :-)

    I haven't tried working with raw eggplant this way but it is definitely worth a try. It should work.
