Healthy Cooking Challenge – Family Favorites Winner

We were so impressed with all the healthy recipes which were submitted. When we calculated the nutritional numbers there was no clear winner. We added categories for nine (9) additional vitamins and minerals and again no clear winner, but we were at least down to two recipes. The two recipes evenly split the vitamins and minerals each being the overall winner of three items.

Given this tie in nutrition we were hoping for a winner in creativity or presentation. Again, still no clear winner. We considered having two winners but decided that we just need to bite the bullet and get serious. Thankfully we had our third judge because it took three votes to come to a conclusion. A heart-felt congratulation goes to:

Oraphan at Easy Veggie for her submission of Brown Rice and Kale soup with Tofu and Ginger. We love that she used brown rice instead of white, added tofu for protein, kale for vitamin A and K, and ginger for antioxidants.

Thank you again to all of those of you that submitted recipes. They were all wonderful and I know I am not the only one that was inspired to make my own variation of them. My husband thinks I need to make all the recipes so that he can choose by taste. Isn’t he helpful? See why I have to keep my eye on him?

Now that we have this challenge under our belts Rose and I will be finalizing the definition of the next challenge. We are definitely going with a fast food theme. Since I will be stuck in the house all weekend due to the blizzard (and possibly longer) I should have the next challenge posted soon.

I hope you are all having a great weekend!

  1. Oh My Goodness! Oh My Goodness! I don't know what to say...what can I say??? This definitely is a BIG surprise for me!!! I've never ever thought that I would be the winner. I was joking when I said on my blog that I could have won if I didn't miss the deadline.

Thank you so much, Alicia, Rose and the third judge for your kind consideration and all your hard work. It's such a great honor to be the winner of this challenge:)

    P.S. I still can't believe this!!!

  2. Congratulations, Oraphan! All the recipes looked amazing, that was a very stiff competition you won! (And your soup sounds delicious, it's one we'll definitely be trying!)

Alicia, in no way does this negate the fact that I agree Dan bears constant spousal supervision, but I'm with him on this one. I think it's only fair you make all the recipes and let him choose his favorite. (If he's as clever as I think he is, he will of course choose your creamy tomato soup recipe!) (Note to Dan: A little lesson my mama taught me - never tease, annoy, insult or otherwise provoke the cook, or you'll find yourself wearing an apron and wielding a whisk so fast you'll wonder how it all went so wrong, so quickly. LOL)

  3. Oraphan,

Your soup has fabulous nutrition. The kale really pushed you over the top on nutrition.

    Congratulation again! ;)

    Lalo,

LOL. I couldn't stop laughing at your comment. You nailed Dan with that one. He is such a huge tease. His father complained about his mothers pancakes one too many times and she refused to make them for him for 45 years of their marriage. He should know not to provoke the cook. LOL.

Thanks for the great morning laugh,
    Alicia

  4. Thank you so much, Laloofah! You really made my day!

Thank you again, Alicia! I'm just wondering if I add a teaspoon of Miso paste in my soup. How the nutritional fact would be? I usually add miso when serving to make it tasty but I forgot to post about it.

  5. Oraphan,

In general adding miso adds B12, protein, probiotics and sodium. It is a healthy addition to food. Remember that it should be added at the very end of cooking so the heat doesn't destroy the beneficial micro-organism.

  6. Alicia, you made me laugh with your tale of Dan's mom 45-year Pancake Boycott! Ha! That woman had staying power, that's for sure! ;-) Well, if Dan didn't learn his lesson from that, the Universe will keep giving him new opportunities! ;-)

    Oraphan, my pleasure! :-)

(Oh, and overheated miso tastes vile and nasty too! Learned THAT the hard way! Kind of like Dan's dad. LOL)

  7. Lalo,

Dan's mom did have staying powder didn't she? The funny thing was that she made pancakes for everyone except Dan's father. He had to make his own, batter and all. Too funny!

  8. Lalo,

Dan loved your note to him and your response to his mom. She was quite stubborn!
