Where Has Alicia Been?

Hi everyone! You are probably wondering where I have been. Life has been hectic are my house and I have had very little time to spend on the computer. I have been cooking though and have quite a few recipes to get posted for all of you.

Sue and I finally got together today and make our first three dishes from “Ad Hoc at Home”. We had no difficulty making them both vegan and healthy. We made Cream or Cauliflower Soup, Chicken and Sausage with Peppers, and Broccolini Salad. Needless to say there were many changes to the recipes to eliminate the animal products and reduce the fat. Some of the original recipes called for copious amounts of olive oil. We recreated every recipe with 1 tablespoon of oil, or less (total, not per serving).

Since I have only been home for an hour tonight and have an eye doctor appointment early tomorrow morning I don’t have time to post the recipes tonight either. Sorry! I thought I would share some sneak peeks of what you can expect to see in the next few days, as I get caught up.

























Pictured above: Baked BBQ tofu on Spinach Salad, Barley Risotto with Beet and Beet Green, Cream of Cauliflower and Leek Soup with Torn Croutons and Beet Chips, Seitan Cutlets and Sausages with Peppers Rustica, Broccolini, Broccoli Rabe and Broccoli Salad.

  2. where do i start??? that all looks wonderful and i WAS wondering where you had gone!lol that cream of cauliflower soup looks good and so does the oh well everything...ha hope to read the recipe tomorrow, goodluck at the eye doc.ttyl Alicia

  4. Oh, Alicia, you are a very naughty TEASE!!! Those dishes look delectable! (And the food sitting on them looks pretty good too! LOL) Can't wait to see some of those recipes!

    Good luck at your eye appointment (and pssst... the last line of the eye chart is HCREPNFO). ;-)

  7. i understand alicia! two of my grandchildren are usually watched by their other grandma, but since she hurt her arm in the fall, i have had them. just too busy with 3 ages 3 and under! yikes! but when i do get a chance to try a new recipe i always check here! appreciate all the time and effort you make to share with us:)
