Chocolate Mousse with a hint of Espresso



Who doesn’t love chocolate? Sometimes chocolate is the only thing that will satisfy a craving.

Dark chocolate and cocoa powder are both full of flavonoids and are on the list of superfoods that you should consume regularly. Chocolate contains eight times the antioxidants of strawberries. It has been reported that dark chocolate will both reduce your blood pressure and your LDL (bad) cholesterol. Don't you love it when yummy foods are also good for you?

This mousse is packed with antioxidants from the cocoa powder and dark chocolate. The only problem with this mousse is that it tastes so good you will want to eat more than one serving.

Chocolate Mousse with a hint of Espresso
Makes 5 small, or 3 regular servings.

Ingredients:

12.3 ounce package of lite silken tofu
6 tablespoons of agave
3 ½ tablespoons of cocoa powder
pinch of salt
1 tablespoon liqueur (I tend to use Crown Royal Whiskey)
½ teaspoon of good vanilla extract
1 tablespoon of instant espresso powder
2 ounces of dark chocolate, melted

Directions:

Combine all the ingredients in a food processor and blend thoroughly. Put the mousse mixture in a serving vessel and cover with plastic wrap. Refrigerate for at least one hour and then serve.

Comments:

This is a very versatile and simple recipe. I love that it takes longer to clean up than it does to make the mousse. I have served this to many people that claim to not like tofu and they have all liked it, and most have asked for the recipe. You can use any liqueur you like in the recipe. Grand Marnier, Coffee Liquor, and Hazelnut Liqueur have all worked well. This recipe has such a lovely soft texture and deep chocolate flavor that I think it will become a favorite of all the chocolate lovers in your house.

  1. This is the BEST dessert of all! Everyone that has tried this, loves it. They are also stunned it is made with tofu and frequently comment, "I don't like tofu, but....". I think it's funny.
