What Constitutes a Healthy Diet?

Last Friday we went out to dinner to celebrate some good news which I am not telling you about yet to build suspense. Come on, I have to hold some things back so that I have something to write about don’t I? ;-) I promise that I will give up the information…just not yet.

Needless to say dinner out means Ian was cooking. Having Ian around the corner means we have no motivation to venture far from home. Seriously why would we want to go somewhere else? His food is delicious, creative and fits most of our dietary criteria. I only say most because of the oil and salt but he has been cutting back on both for us which we really appreciate.

This particular evening Will was working and when he is in the kitchen he takes care of our food. Sadly Will has now gone to work at Woodberry Kitchen which I thought those of you who are local would like to know. According to Will it is his understanding that there is always at least one vegan entree on the menu there. Once Will has been there a little longer I will let you know about the vegan options.


Given that we were celebrating we decided to start the evening with a nice bottle of vino. Alan suggested a Sicilian red and who was I to argue? Just so you know we did share the wine with Alan, Emily, Ian and Will so we didn’t drink the bottle ourselves though that would have been no problem in the past. Those of you that know how much wine we used to consume can keep your stories to yourselves LOL.  Actually I am kidding about this. I would be the first one to admit that we drank too much red Italian wine in the past.  We both loved it but it really isn't the best thing for your health even though people only seem to focus on the beneficial aspects there are many reasons to reduce your intake.


We started our meal with a nice clean salad of spinach, green apple, cucumber, and red bell peppers. This was dressed with tarragon vinegar and some fresh pepper. It was a great light salad. This was the perfect way to start a meal on a hot and humid evening.


The second course this evening was a spicy Thai mushroom pizza with cilantro. This was an excellent pizza and didn’t take notes on what he included. I will send him a note and see if he will give it up so that I can recreate the topping which was amazing. Nice job Will we really loved it!


The next course was a grilled pineapple and radish salsa stuffed avocado. Talk about delicious. A girl could get used to eating like this. Oh yeah, I already have gotten used it haven’t I? ;-)


For dessert we asked Will if he could make us a fruit plate and this is what came out. It included pineapples, strawberries, oranges and fresh mint.

Needless to say it was another lovely dinner. We chatted with everyone, like always and had a great evening. There are many perks associated with being a regular at a restaurant. If you haven’t found a favorite restaurant I strongly recommend that you do.

What Constitutes a Healthy Diet?:

This is a difficult question to answer and I think that a lot of it is individual. However I also think that there are many concepts which are universal and those are the ones I have outlined belo.

Here are the things I think we could/should all try to do:

• Make water or green/white tea your predominate beverage

• Eat 10+ servings of fruit and veg per day (this is the amount the experts say reduces the risk of disease particularly cancer)

• Eat some portion of your produce raw (preferably half on average) each day, fresh pressed vegetable juice is a easy way to increase your produce consumption

• Focus on whole unprocessed grains in lieu of refined or processed grains

• Concentrate on getting your protein from plant sources (beans, grains, nuts and seeds)

• Avoid alcohol or at least limit yourself to one glass per day if you are woman, two if you are man (as little as a 5 ounce glass of wine per day has been shown to increase a woman’s risk of breast cancer)

• Reduce your daily sodium consumption to below 1500mg per day or less (we are closer to 500mg on average)

• Reduce/eliminate processed food including vegan items like faux dairy

• Reduce/eliminate added sugar including “healthy” sweeteners like maple syrup, agave, malt syrup etcetera

• Reduce/eliminate processed oils in your food

• Reduce/eliminate your consumption of animal products (meat and dairy)

There is a lot of science to back up everything that I have bulleted above. No single item is difficult to do but taken together they tend to be a little overwhelming for many people. Given that you know how I eat I am sure you have realized that the items which I listed as reduce or eliminate I have eliminated except the oil and salt that is only when we are out.

My theory is that most of us ate a standard American diet for many years and during that time we consumed an excessive about of items that weren’t good for us and that meant we need to seriously clean up our act to get back to ground zero. In essence what I am saying is that we had a lot of sins to make up for with our new lifestyle.

When we were new to eating a healthy vegan diet I didn’t expect it to become permanent. Not only didn’t we expect it to become permanent we didn’t want that to happen either. Both of us had a difficult time making the initial changes. Even though we did it there was a lot of complaining. However we both felt so good and the lab tests were excellent so we kept doing it. The next thing we knew we lost our taste for less healthy food. I am pointing this out so that you know that there is a light at the end of the tunnel and it isn’t a train.

If you want to make some changes to your diet I would encourage you to pick one item and work on changing that. When your first change becomes a habit move to the next item you want to change and so on until you cover them all. Eventually those little changes will add up and before you know it you will have a very healthy diet. When we changed our diet we made most of the changes all at one time that resulted in the diet you see now all at one time. I don’t recommend that anyone do that. Easing into things would definitely be less shock to your system and palate.

I hope this gives you some ideas of how to get started. You don’t need to do everything at once and that probably isn’t the best idea for most people. But by making changes a little at a time you will end up with a very healthy diet eventually. Since I get so many questions about this particular topic I am going to try to write something about this every week if not more often. • Both Saturday and Sunday we spent the evening at Tide Point watching the sunset on the water. The weather was perfect both evenings and it was a relaxing way to spend the evening. As much as we both enjoy the water I don’t know why we didn’t start doing this sooner. I hope you enjoyed the photos from Saturday and Sunday that I posted. I loved taking the pictures.




• The meals I made for my parents were well received both days which was unusual. Given all my mother’s requirements it is difficult for me to cook for my parents. I decided to relax and include whole wheat pasta and that seems to work well. It isn’t the healthiest thing we could be eating but it keeps peace at family gatherings which is a positive.


• Our trip to the farmers’ market on Sunday was a resounding success. We came home with 8 bags of organic produce and a box of broccoli leaves for juice. *happy dance* I did spend almost an hour juicing the broccoli leaves but it resulted in a lot of juice which was great. Given the quantity of broccoli juice I made a snack that included: broccoli leaves, apple, carrot and lemon in the afternoon.

• In addition to produce I also bought a hula hoop at the farmers’ market. Have I used one since I was a kid? Of course not but it seems like a fun way to add a little extra activity into my life so it seemed like a good idea and was only $20. Dan wants to take video of me trying to relearn how to hoop but I am unlikely to allow that to happen. ;-) Let’s just say using a hula hoop is not like riding a bike. If you know of any DVDs on how-to please share.




• Monday I spent with my sweetie which made me very happy. Dan had a meeting in Richmond and since he was driving I went with him. We stopped at the Ipanema Café for veggie sandwiches before heading home. Dan ordered the “chorizo” wrap and I got a tofu and hummus sandwich. If you ever get to Richmond be sure to check out Ipanema Café. The food is very good, it is prepared promptly and the service is very friendly.

• We took a different route home from Richmond through the burbs. Okay so maybe it was more like the country but it was a nice drive with farms, cows and horses. We don’t tend to see much of that where we live so I enjoyed the scenery. I haven’t mentioned this in ages but I grew up in Indiana in a little town called Portage. We weren’t a farming community but there were farmers and fields around. The drive on Monday reminded me of my childhood with rolling terrain.

• Monday was a long day because we were out of the house from 7:00am until after 10pm but overall I would say it was a great day. We ended our day with a quick dinner out at our usual place. Ian was off tonight but we still had a great meal and the weather cooperated so that we could eat on the patio. Nothing like a relaxing dinner al fresco to end the day.

We ended up heading to the harbor again after lunch and I ran out of time to get up a proper post. Dan and I don’t always have time to spend together so when we do I try to make the most of it. I am sure that you understand that.

Since I promised to try to post everyday *oops* I wanted to share a few photos which I will tell you about in a future post.

Wednesday With the Guys and the Food

Last week our good friend Phil was in town from Springfield, Missouri. Phil is one of those people that I just want to be around. He is kind, funny, and intelligent and who wouldn’t like spending time with someone like that? We always have great conversations so I take every opportunity to see him when I can. Since Dan, Phil and Jason had a meeting about an hour north of here I drove up with them so I could talk in the car to get extra time with the guys. I am definitely a talker in case you hadn’t figured that out. When I was little my father’s nickname for me was “Chatty Cathy” which was popular talking doll in the 60’s. I have been a talker a long time.

While the guys were meeting I was busy reading my favorite magazine “Donna Hay”. Those of you from Australia and New Zealand know this magazine I am sure. I stumbled across it in my dentist’s office of all places and was immediately thrilled with the content. This magazine takes food porn to a new level and as you can imagine I love that. If you try to order this in the states I will warn you that it crazy expensive (for a magazine) because of the international shipping. I think we are paying $97 a year for it but it is so worth it to me. The magazine is NOT vegan but I get ideas from every issue.  Here is an example of the ideas I get from the magazine. Doesn’t rice pudding with ginger crumble sound absolutely amazing? I really love this magazine. She has written cookbooks if you can’t find the magazine for sale on a newsstand near you look for her cookbooks.




After I finished reading the magazine I decided to check out the surroundings and found myself in the gym of all places. ;-) The facility was small but well stocked. Apartment living is really not what it used to be is it? If I lived here you know where you would me every morning right? I would either in the gym or the pool or maybe a little time in each. LOL

Once the guys were finished with their meeting we headed back to Baltimore and stopped for lunch before I went home and they went to the office. Unanimously we decided to call Ian and head there for lunch. Poor Ian we only gave him 45 minutes notice that we were coming in but he managed to accommodate us. We are SO lucky to have Ian. I know that I say that all the time but I really mean it. I have no idea what I would without Ian some days.


We started with a curried cauliflower soup that was finished with almonds and green onions. Nice job Dani we loved it! Thank you for having a vegan soup on the menu every day. We really appreciate that!


Next Ian made us a delicious organic salad of: mizuna and cilantro with radish, avocado, and pomegranate roasted tomatoes which was light dressed with apple cider vinegar. This salad was perfect for the heat and humidity we had that day. This particular day was one of those scorchers were the temps were over 100 and the humidity felt like it matched the temperature. But even with the weather it was still great to spend time with the guys.

Jason ordered the lamb burger which includes harissa and enjoyed it. We aren’t often at the restaurant for lunch so I never think of burgers. However I did notice that there wasn’t a veggie burger on the menu. I am going to see if I can convince Ian to try making a house-made version of veggie burger to see how it will sell. Wish me luck as I think it will take some fast talking to get him to give it a try. ;-)

After the guys were finished at work we back to the restaurant for dinner. We had given Ian a few days warning so we had time to contemplate dishes for us and he outdid himself like usual.  Only for dinner Walid joined us instead of Jason.  We had a great time chatting and eating, basically just hanging out and goofing off.   


Our first course was a salad of black beans, corn, avocado, tomato, and jalapeno on a bed of mizuna. He finished this with crispy tortilla strip. The contrast of the soft and crispy and the sweet and spicy was perfect. This was a great dish for a hot humid evening.


I loved the second course which was saffron potatoes, garlic scapes, sun-dried tomatoes and lacinato kale. Garlic scapes are the top of garlic, the items that look like green beans in the photo. They taste like garlic only very mild. Since I typically use them raw to make pesto I loved the idea of cooking them.


The third course was very creative and was hands down Dan’s favorite. I loved this one too but it is hard to top garlic scapes in my book. ;-) This dish was cucumber noodles with lime and cilantro that was topped with Szechuan mushrooms with peanuts. Why does Ian say he can’t do vegan? ;-)

So…What Changes Do you Want to Make?:

This is a follow up to my post yesterday about why we eat the way that we do. Lots of people talk about wanting something (like to be healthy, lose weight, change their diet, etc.) but something happens and they don’t follow through. That has happened to me many times in the past. Has it ever happened to you? I have spent a lot of time trying to understand my motivation, or demotivation as the case may be and have learned a few things that I want to share in case they help you.

The first thing I have learned is that unless I am truly committed to doing something it never happens. Many times in the past I have tried to change (like New Year’s resolutions) and somehow I didn’t get the results I was looking for. Looking back at those learning experiences (aka failures) I realized that I wasn’t invested in the change. For me the trick to making change is to be 100% committed to that change. The problem I run into is how to get myself to commit.

Depending on what my goal is my motivation can be quite different. Lifestyle changes always come down to knowledge. I need to do my own research so that I thoroughly understand the impact of my actions before I was going to make any significant changes. However once I “get it” there really is no turning back.

For other types of change it needs to be something that I passionate about. For example I adore my husband. There is nothing that I wouldn’t do for him. It is very easy for me to commit to things that will benefit Dan. Again it always comes back to home much I really want something.

You all know that one of the things that is very important to me is sharing the benefits of a healthy lifestyle. I would definitely say that I am passionate about this “cause”. I wake up every morning looking forward to doing research about health. As crazy as it sounds research really gets my blood pumping. Now I am wondering, what gets you pumped?

There are days when I am so happy that I don’t want to do with myself. Our Saturday has been a very good one which means that I have plenty to be thankful for today.

• My feline children were so precious today I almost couldn’t stand it. I am so fortunate to have three adorable little fur children in my life. Do you have any furry children in your life?

• Dan and I are having a wonderful and relaxing weekend together. I love my weekends with my sweetie.

• Everything with our “new family member” is coming together very well. We are staying very busy preparing for the arrival but things are going great. I guess this is where be prepared comes into play. I love it when a plan comes together.

• Listening to jazz always puts me in a mellow mood. We have Steve Cole playing on Pandora now (as I typed that) as we are sipping white tea with tulsi and roses. What a great way to spend Saturday afternoon. This is what weekends are made for in my opinion.




• The weather has been cooperating today and keeping the rain away. It is always nice when we get enjoy the outdoors over the weekend. Given the nice evening we went downtown to watch the sunset over the harbor. We found a little out of way spot last weekend which was great. Here are a couple pictures I took of the harbor while we were there. Gorgeous isn’t it?  I hope you are starting to get a better feel for Baltimore as I post more pictures of the city.

• Dan asked me if I had time to spend Monday with him. Isn’t that nice that he likes to see when whenever he can? How lucky am I to be married to a man who loves to be with me?  I guess you know what I will be doing on Monday now right?  :-)

Who Stole the Last Week of My Life?

Hey guys how have you been? Life here has been a little crazy but in a good way. However all the excitement hasn’t left me any time to blog. I have managed to do some posting on Facebook, so if you aren’t following me there please do. Since it is much quicker to post of Facebook that is why I have been able to work that into my day even when I didn’t have time to blog.

For those of you that are local I wanted to highlight a few shopping locations nearby. Last week there was a little grocery shopping in Columbia. Grocery shopping? Believe me it isn’t what you think. ;-) My friend Sue introduced me to two international markets about a month ago so I took Dan there before our raw dinner at Great Sage last week. I know it doesn’t sound much like a date but since we both love this stuff so it worked for us.


Nazar Middle Eastern Market

The first market we stopped at was Nazar which specializes in Middle Eastern food. If you like unusual food items this is a great local place to check out.



They have a nice variety of spices which I love. I found grape molasses here which I bought and have no idea how to use yet. Look for the bulgur in various grinds from fine to coarse. They also carry cardamom black tea and even fermented carrot juice. This is one of those places that you need to give yourself some time to explore. The store isn’t big but they carry some very unusual ingredients that you don’t want to miss.

Lily’s also has a nice selection of spices particularly dried chilies.



They also have some unusual varieties of dried beans. This is the store where I found the canned cuitlacoche (corn fungus) that I talked about a while back. It is very close to Nazar so I go to both stores when I am in Columbia.

Roots is what a local natural/health food store should be. If you are heading to Great Sage for dinner make time to stop at Roots. The store is impeccably clean, well stocked, and much bigger than most health food stores.





They also have a nice gluten free aisle with items that I haven’t seen anywhere else. I stocked up on raw nuts and seeds this last trip. If we lived closer I would do a lot more shopping here.

My week:

I have spent very little time at home over the last week. Additionally when I have been at home I have been swamped with work. So much for a relaxing and peaceful retirement I guess! ;-) Even though I have been busy it has all been in a good way. I will be telling you more about it in future posts. There has to be some mystery and anticipation right?

Our weather has been beautiful lately and my broken toe is basically healed so I have been starting my mornings outside each day. I love being outside, getting a little sun, breathing the fresh air and listening to the birds. If I knew mornings were this nice I may have given up my night owl ways decades ago. Okay maybe that is a bit of an exaggeration but I am really learning to like mornings. Who said that? LOL






Here are a few random pictures I took the last week to share with you. I am very fortunate to have such a beautiful area outside my door.

How to Get Started Changing Your Diet?:

This is the most common question I get by email. Typically people will say something like “they would love to eat like we do but it is overwhelming so they don’t start.” This is normally followed by "how did we make the change". Those of you that have been reading a long time know the answer to these questions. However since I still get these questions I wanted to make sure that everyone knew the answers

First Dan and I have not always been vegan or even vegetarian. In fact we were very adventurous omnivores for the majority of our lives. I will spare you the details but just know that we had no food rules until we became vegan and that will give you some idea of our prior diet. Toss into the mix a chef friend and you imagine the things we used to eat. We were those people that would eat anything and everything. I look back on that now and I am glad I had the experience to become familiar with so many unusual flavors and textures. However I also can’t imagine ever going back and that is still amazing to me.

While the food we used to eat was delicious it wasn’t healthy for us or the planet. I can honestly say that I was brainwashed by the media into believing that everything in moderation was the way to go. Funny I look at that now and can’t believe I ever fell for that idea. If someone told me a little arsenic wouldn’t hurt me would I have believed that too? Of course I wouldn’t so why did I think the same thing about food? Easy, because I wanted it to be true and didn’t bother to educated myself. The bottom line was that I didn’t want to give up meat, dairy, sugar, or baked goods.

After I threw myself into nutrition research there was no going back. Initially I didn’t believe what I was reading could be true. Being a true skeptic I researched everything that seemed outrageous to me. I used PubMed to try to refute what I was reading. The problem with that was the more I read the more I realized that I had been deceived by the mainstream media. However I was still reading things from well respected “scientists” that everything in moderation was fine. It took me some time to reconcile this in my mind. Eventually I understood that sugar, fat and salt were addictive and this fact explained to me why people (even scientists) are reluctant to make drastic dietary changes.

I can honestly say that if we hadn’t been faced with a crisis (cancer) I don’t know for certain that we would have had sufficient motivation to make such dramatic changes. In retrospect I wish we had made these lifestyle shifts long ago. There is something about a crisis that spurs people to act and we were no exception. The biggest problem we had wasn’t the dietary shift decision rather it was what to eat. For the first six months I struggled to figure out how to feed ourselves. In fact that is one of the reasons why I started the blog. I had such a tough time sticking to this way of eating because I had no idea how to cook without (or with little) oil, salt, etc. Flavor was important to us but so was health. If you go back and look at my earlier recipes you will see that they are not as healthy as my food now. That is because as I learn more our diet improves. It also because the longer we eat this way the more our palates adjust and change which is a very good thing.

When we were new vegans I spent a lot of time looking for recipes to use. The problem was most of the ones I found used oil, sugar, flour, and processed foods (commercial faux dairy, mock meat, etc.). While those foods are vegan they aren’t what I consider healthy now. Initially I used some of these items until we were both ready to give up versions of our favorite foods.

Many of you have asked how we are able to stick to this “austere” diet. There are many reasons that this works for us. Both Dan and I feel great on this diet and that helps us to keep going. Our respective blood pressure is better than it has been in 30 years. My blood pressure is typically in the 95/55 range and I am 49 years old so that is miraculous in my mind. By point of comparison my blood pressure was typically 125/85 before we changed our diet. We both have unmedicated total cholesterol levels below 200 and Dan’s used to be in the mid 250’s. Blood glucose levels are something else that are not a concern since we our fasting levels range between the mid 70’s and low 80’s. When we go to the internist our lab results in general are excellent for people our age. My seasonal allergies that I struggled with for over 20 years have completely disappeared. This may not sound like a big deal but it is huge for me. When I was an omnivore for 6 months out of the year I took Sudafed every four hours to keep my allergies under control. I haven’t had a Sudafed in years and my symptoms are gone. One of my favorite unexpected side effects has to do with my skin. About 6 months after we cleaned up our diet people started remarking that our skin looked so great and what were we doing? Honestly I hadn’t even noticed this one since the change was subtle but I am very happy with my skin now.

Dan and I are only two people so I have no idea if all of these things will happen for you, but I suspect most of them will based on what I have read. I am sharing our experience to give you something to think about. Long ago I read something about human behavior that I never forget. In essence it said that if you continue to behave the same way you will also continue to get the same results. That may seem obvious but from the behavior I see most people they don’t get it.

I will give you an example so it makes more sense. A friends of mine are concerned about heart health so they are trying to clean up their diet. The problem is the family doctor did these good people an injustice by saying that the heart problems are genetic. What do you imagine my friend’s reaction was? If you guessed they were a little demotivated you are correct. My friend’s diet is better than most of America but still includes small amounts of like meat, chicken, fish, oil and dairy. As you may also guess the results of this approach haven’t been stellar either. It pains me to see things like this because I feel certain that Dr. Esselstyn’s approach would work for my friends. However I am also certain that because of their doctor’s comment that the problem is genetic Dr. Esselstyn’s approach probably won’t seriously be tried. If you have been reading me a while you know it kills me to keep my mouth shut because I care. I want so desperately to help but I have finally come to realize that people have to want to be helped otherwise there is nothing I can do. *sigh*

People develop powerful connections to food that still confuse me to this day. There are so many other things in life that are much more important to me, like living, that I don’t understand why people resist change. I wish that I could bottle how I feel so that people would understand the impact of a healthy diet and lifestyle. As someone who lived the standard American life for most of her life I can tell you that nothing tastes better than being healthy feels. Maybe one day more people will know that feeling. At least I hope they will and I plan to continue to share my story as long as I can.

• I am grateful for everyday that I get to spend with my wonderful husband. He is the center of my universe and the most important person in my world. The best decision I ever made was to marry him. I hope that all of you have someone in your lives that loves you unconditionally flaws and all. It really is a fantastic feeling knowing that I am loved and cherished exactly as I am.

• Our weather has been gorgeous lately and I am enjoying it immensely. I have been about to get back outside every morning and that is the perfect way to start my day. I love being out in nature, hearing the birds sing and smelling the flowers. I am also very thankful that my seasonal allergies are long gone so that I can enjoy the outdoors without medication and/or clogged sinuses.

• I am thankful for my friend Laura Jill you urged me to dive into Facebook. I will admit that it seemed a little daunting at first. However having the Facebook page allowed me to keep in contact when I didn’t have time to blog and that was wonderful. Otherwise I would have been much more antsy not posting anything to the blog. For those of you that don’t have Facebook it is very easy to use if I can figure it out on my own. LOL

• We have a new addition to the family which I will tell you more about later. Dan and I are both thrilled and looking forward to getting our new “baby” home. Preparing for the arrival of the new family member has been keeping us very busy. However I expect things to settle down soon.

• I am thrilled that today is Friday and that means the weekend is almost here. Hopefully the weather will cooperate so we can enjoy some time outside this weekend. I am thinking a picnic by the bay would be nice way to spend some time.

• Recently I have been working on a new project. When that is ready to share I will fill you in. Since it is health and nutrition based I am sure you have guessed that it is a labor of love for me. I am hoping to have that ready to go in the next month.

Today has been speeding along like most Fridays but everything has gone well. Everyone is fine and life is good.
