I think the most important thing is to over season the sausages rather than to underseason if that makes sense. If you liked the texture of the bean version I would suggest you add more seasoning and see if you change your mind about that recipe.<br /><br />We started with Tofurky too. They do have good flavor and texture so I know why your hubby likes them. But you are right to try to eliminate soy protein isolates. They are very often found in in "fake dairy" too. That is why you never see any Tofutti-type things on my blog.<br /><br />I try to eat a whole head of lettuce salad at least once a day. Otherwise it is difficult to get in enough veggies every day. That is the same reason I am on a greens in smoothie kick. However it made me wonder if I could flavor tofu. I will play around with this and see what I can come up with. In the past I added salt to my seitan so you may want to consider adding it to yours if you still use salt. If you have any questions let me know. The most "meaty" texture I have tried is my steam/baked version. It is crispy on the outside and chewy on the inside. The other thing that changes the texture is what you use in the dough (all gluten, with beans, with oil, or with breadcrumbs).
