I understand the concern about explosions ...Sarah,<br /><br />I understand the concern about explosions but I think your fear is unfounded. Before I had my pressure cooker I too was worried about it. However, they are so easy to use I can't imagine how there could be an explosion unless you are trying to use a damaged cooker, which you couldn't do by accident.<br /><br />Mine is a stove top version 6.5 qt by Fagor. I absolutely love it and sometimes wish I had two.<br /><br />I think the choice to go countertop or stove top has more to do with space constraints. I have so many countertop appliances that I really don't need another one. I use my cooker quite often to make rice or beans so it would be on my counter almost everyday. If you have a lot of available counterspace though, go for it.<br /><br />If you have any other questions on pressure cookers let me know. I thought that starting with an electric one might be a good first step for me (less scary, less chances of explosions?) but maybe that fear is unfounded. You can make beans, brown rice and wheat berries in it so quickly. I also use it to make seitan sausage.
